Punjabi White Gravy

White gravy is a versatile base used in various North Indian dishes. Made with onions, spices, and curd, this creamy gravy forms the foundation for many delicious recipes, such as Methi Malai Matar, Navratna Korma, etc.  Preparing white gravy in advance can save time and make cooking complex dishes much easier.

Ingredients:

  • 250 grams diced onions
  • 50 grams Bharat White Gravy Masala
  • 1 tablespoon oil
  • 1 tablespoon ghee
  • One-fourth teaspoon shah jeera (caraway seeds)
  • Half tablespoon ginger garlic paste
  • 1 tablespoon curd

Method:

  1. Prepare the Onion Base: Boil the diced onions in 1/2 cup of water for 10 minutes. Add Bharat White Gravy Masala to the boiled onions, mix well, and cook for an additional 5 minutes. Allow the mixture to cool, then blend it into a smooth paste.
  2. Cook the Gravy: In a pan, heat the oil and ghee together. Add shah jeera and let it roast until it starts to crackle. Add the ginger garlic paste and sauté until fragrant. Stir in the white gravy paste and cook for about 5 minutes.
  3. Mix in the curd, then add 1-2 cups of water to achieve the desired consistency. Bring the mixture to a boil. Your white gravy is now ready and can be used as a base for various dishes.

Methi Matar Malai

Ingredients:

  • 125 grams fresh methi leaves
  • 125 grams green peas
  • 1-2 teaspoons oil
  • Prepared white gravy (as per the recipe above)

Method:

  1. Prepare the Methi Leaves: Chop the fresh methi leaves and soak them in salted water for 10 minutes to reduce their bitterness. Drain the methi leaves and cook them in a pan with 1-2 teaspoons of oil until wilted.
  2. Cook the Peas: Boil the green peas separately until tender.
  3. Combine and Cook: Add the cooked methi leaves and green peas to the prepared white gravy. Stir well and cook on a low flame for 10 minutes, allowing the flavors to meld together.
  4. Serve Methi Malai Matar hot with naan, roti, or steamed rice. The creamy texture and balanced flavors make this dish a favorite in many Indian households, providing a delightful combination of bitter, sweet, and savory tastes.
