Tava Sabzi

Tava Sabzi is a delightful mixed vegetable dish cooked on a tava (griddle), combining a variety of vegetables with aromatic spices. This flavorful and colorful dish is perfect for serving with phulkas and makes for a wholesome and satisfying meal.

Ingredients:

  • 3 pieces brinjal
  • 3 medium-sized onions
  • 2 medium-sized potatoes
  • 2 pieces capsicum
  • 250 grams cauliflower
  • 200 grams bhindi (okra)
  • 5 teaspoons oil
  • 5 teaspoons Bharat Tava Sabzi Masala
  • 5 to 6 cloves garlic, crushed
  • 1 teaspoon cumin seeds

Method

  1. Prepare the Vegetables: Slice the onions and tomatoes and keep them aside. Slice the brinjal, potatoes, and bhindi. Cut the capsicum into 1-inch pieces.
  2. Shallow Fry the Vegetables: Heat oil in a pan and shallow fry all the vegetables separately until they are partially cooked. Set them aside.
  3. Cook the Base: In a tava, heat 3 teaspoons of oil and add cumin seeds. Once the cumin seeds splatter, add the sliced onions and cook until they turn translucent. Add the tomatoes and crushed garlic, cooking until the tomatoes release oil.
  4. Combine and Simmer: Mix all the sautéed vegetables into the tomato base. Stir well to combine, then let the mixture simmer for 5 minutes on medium flame, allowing the flavors to meld together.
  5. Garnish and Serve: Garnish the Tava Sabzi with chopped coriander. Serve hot with phulkas.
