Kutchi Dabeli is a popular street food from Gujarat, featuring spicy, tangy potato filling stuffed in pav and garnished with a mix of sweet and spicy chutneys. This recipe, enhanced with Bharat Kutchi Dabeli Masala, brings out authentic flavors of dabeli.
Ingredients
- 12 square pav for dabeli
- 250g boiled potatoes
- 50g Bharat Kutchi Dabeli Masala
- 1 tablespoon oil
- 1 cup water
- Raisins, Pomegranate, masala peanuts & chopped coriander for garnish
- Spicy Chutney (Recipe given below)
- Sweet Chutney (recipe given below)
Method-
- Prepare the Potatoes: Boil and grate the potatoes.
- Cook the Masala: Heat 1 tablespoon of oil in a pan over low heat. Add the Bharat Kutchi Dabeli Masala and sauté for a few seconds until fragrant.
- Mix Potatoes: Add the grated potatoes to the pan and mix well with the masala.
- Add Water: Pour in 1 cup of water and stir until the mixture is well combined.
- Spread Mixture: Take a dish and spread the potato mixture evenly, keeping a thickness of about 1 inch. Garnish with raisins, pomogrenate, masala peanuts and finely chopped coriander.
- Spicy Chutney: Blend 6 to 10 cloves of garlic, half teaspoon green chilly, half tea spoon red chilly powder, salt (to taste) in a blender and grind to a smooth chutney.
- Hot and Sweet Chutney: Soak 100 grams tamarind and dates in hot water for 30 minutes. Grind the soaked tamarind and dates mixture and add salt to taste.
Assembling the dabeli
- Cut the pav from the middle.
- Spread the prepared spicy and hot & sweet chutneys inside the pav.
- Spoon about 2 tablespoons of the potato filling into the pav.
- Add chopped onions and seasoned peanuts on top of the potato filling.
- Now, to toast the dabeli, eat a spoonful of butter or ghee in a pan. Fry the stuffed pav on both sides until golden brown and crispy. Serve hot.
